Recipe # 1



Potato & Leek soup Recipe Materials




•    1 teaspoon salt
•    20 black peppercorns
•    ½ Cup white dry wine
•    5 cups chicken stock
•    1¼ lb - Diced potatoes
•    ½ Cup crème fraiche
•    4 sprigs thyme
•    2 leeks, (size-small)
•    2-bay leaf
•    2 tablespoons butter
•    2 slices Bacon (chopped)
•    2 tablespoons - Snipped chives
•    ¾ teaspoon white pepper

 

Potato Leek Soup Preparation




Take leeks, wash and cut the green parts. Take Cheesecloth, green leeks, thyme, bay leaves, black peppercorns trim and set it aside. Now cut the white part of leeks in equal halves. These halves wash by cold water and cut evenly. Put a pot in medium heat and add the butter to it. Cut the bacon and melted butter add with it. Stir from time to time after the pot has been chopped Bacon, leeks; and cook about 5 minutes. Then, add the amount of white wine into the pan and boil to wait until other crude materials, potatoes, chicken stock and pepper add with salt to taste. Simmer about 30 minutes, until the potatoes to the pot, now cook other ingredients. From the pot, remove the cheesecloth and blend it well to obtain a homogeneous paste. Before serve, add some of crème fraiche with snipped chives then serve it hot.
